Prosciutto di Olicana:

A Deli meat, Charcuterie or Italian dried ham (taken from the hind leg of pig or wild boar). Crudo meaning uncooked (raw) and prosciutto is derived from Latin, pro meaning before and exsuctus - to suck out. Prosciutto Crudo is a dry-cured and air-dried, ready to eat Italian ham, authentic versions are prepared using only salt and free-ranging pigs. It's normally served thinly sliced as antipasti or on a charcuterie board.

 

Prosciutto d’Olicana (Prosciutto of Ilkley) is a Slow Food Yorkshire Prosciutto made with free range Yorkshire pork. Olicana is the name given to the Roman fort of Ilkley - where it's still hand-made today.

A deeply rich and delicate nitrite free, sugar free ham. Transforming the leg of the freshest free range pork into this delicacy is achieved by salting with Pink Himalayan salt, then hung to mature in our climate-controlled curing cellar for 9-16 months.


The result is powerful, smooth, and delicate, aromatic flavours that melt in the mouth, Umami! The best of Yorkshire - our Crudo hams are handcrafted with a full-on Italian ethos, much like the renowned Italian PGI hams: Prosciutto di Parma or Crudo di Parma PDO from the Emilia-Romagna region of Italy. Strict rules ensure the quality and provenance of this product. Sodium nitrate, nitrites, sugar, or any cure seasoning are prohibited. Prosciutto di Olicana is also produced from free-ranging pigs and closely aligned to these very principles.
