Our air dried, Dry Cured Pancetta is in the Italian style and produced from Free-range Yorkshire pork. The freshly cut bellies are coated with an authentic and original Italian recipe. These are left for 3 weeks for the magic to happen, then hung for 3 days, chilled and air dried for a further 4 weeks to give an all natural sweet Italian taste. Unlike other Pancetta's around the Primal Cut product can be cooked or eaten straight from the pack. As with all our products it's all-natural & therefore Nitrite-free & preservative-free.
