Guanciale is cured pork cheek or jowl. This most famous Italian delicacy is highly prized for the flavour it imparts on other ingredients and it's very low rendering point. Though similar to bacon or pancetta, the production of Guanciale is much more involved and takes several weeks or even months - it's classed as ready to eat charcuterie meat rather than bacon.
Guanciale is the first choice for making dishes authentic spaghetti carbonara and gnocchi with pecorino sauce, or all'amatriciana. Hold the oil! Real guanciale is all about the deliciously creamy fat and the flavour it infuses into other ingredients.
