Alfalfa Sprouts Benefits: Alfalfa is a great alkalyser for the body. They are a raw natural food high in chlorophyll and nutrition including minerals and trace minerals.  They work as a great body cleanser, will help eliminate stored water and also enhance the endocrine system espeically the adrenal and pituitary glands.

Alfalfa is an excellent source of protein, vitamins, minerals, enzymes, amino acids, chlorophyll, and other nutrients. They are a good source of fiber, iron, manganese, calcium, phosphorus, vitamin B-6, folate, potassium, magnesium, zinc, copper, and selenium. The sprout leaves contain more than twice the amount of Vitamin K found in mature alfalfa plants. According to a study published in the Journal of Agricultural Food Chemistry in 2006, alfalfa extract (juice) contains about 70 percent more total phenolics than red wine. Researchers concluded that this might be due to flavonoids and anthocyanins, both of which are antioxidants.

Alfalfa seedlings are also rich in flavonoids and phytochemicals that may be beneficial in the prevention or treatment of tumors and cancer, heart disease, diabetes, liver damage, and stroke. In one study, researchers at the University of Illinois tested mice given various doses of the compound called sulforaphane. After five days, they removed the tumor cells from the mice and looked at them under the microscope. Sulforaphane had destroyed all of the tumor cells!
