Did you know that as well as making an amazing gluten free bread loaf, our paleo-friendly Zucchini Bread Mix can be adapted to make the most delicious banana bread? As well as being flavourful and all natural, this banana bread is grain free, has no added white refined sugar and is naturally free from gluten. What you will need to bake our Gluten Free Banana Bread
5g Apple Cider Vinegar
4 large free range eggs
2 ripe bananas ( the riper the better - about 200g)
1 Teaspoon Cinnamon
Topping
Chopped Walnuts (optional)
To make Gluten Free Banana Bread
Preheat the oven to 180C
Line a 1lb loaf tin with baking paper
Add all the ingredients together and mix well either by hand, with a food mixer of food processor - to create a smooth batter
Pour the prepared batter into the loaf tin
Sprinkle the chopped walnuts on top if using
Bake for approximately 50 minutes or until an inserted skewer comes out clean
Leave to cool , slice, serve and enjoy!
Mike's Tip
This gluten free banana bread toasts up really well and, like our fruit toast, is best served warm or toasted with lashings of butter.
