Primal Bacon (Smoked)
Our Primal bacon is dry cured in sea salt, herbs, spices and fresh mediterranean fruits. These traditional methods give subtle aromatic scents and intensive flavour.
Our dry curing process is carried out with a great deal of care and attention and without added water or artificial preservatives, i.e. no froth or shrinking when cooking!
Unlike the artificial crimson of commercial bacon, Primal Bacon is a more natural blush red in colour, this is due to the curing process being entirely free-from artificial preservatives.
It takes a total of 7 weeks to produce our nitrite free Bacon. Most commercial bacon is produced in 3-5 days and has up to 25% water injected to plump it up.
